| β-Casein

Beta-casein is a protein that in humans is encoded by the CSN2 gene.It is in the class of phosphoproteins and generally occurs in mammalian milk.As a member of intrinsically unstructured protein family, beta-casein (beta-CN) contains relatively high amount of prolyl residues, adopts noncompact and flexible structure and exhibits chaperone-like activity in vitro. Like many chaperones, native beta-CN does not contain cysteinyl residues and exhibits strong tendencies for self-association.

The recovery of Bovine β-Casein spiked at three different levels in samples throughout the range of the assay was evaluated in various matrices.

| Linearity
